So fabulous! I attended this private dinner event.
@chefjameswon ‘s Japanese-French elevated Yoshoku degustation from his @shinlabobyjameswon team.
Marriage with aromatic Hennesy VSOP, Hennessy X.O, and Glenmorangie 18 years Old took us on a culinary journey.
Japanese Western cuisine “Yoshoku” sublimated to the extreme.
The dishes were created by concentrating on the details of each flavor, cooking method, combination, and texture, while incorporating local ingredients and flavors.
10 dishes course started from Aloe Nigiri.
Aloe marinated with Kombu for 7days and mixed rice have interesting texture.
The best dish at my table is Hamachi & Tuna Sashimi. Hamachi is aging for 7days, Cured with white cocoa butter and served with Chive & Dill oil. Fatty, melty, mild and full of Umami.
Signature Don is Truffle mushroom Hayashi ( brown stew with tomato. Japanese traditional western stew) with Onsen Egg, Caviar and Ikura.
My first time to eat such a Atas Hayashi rice!
Each dishes have deferent texture, amazing combination and Umami.
Even for me, a Japanese who is familiar with Yoshoku, these dishes were all new to me.
