Hairy Crab season has arrived!
We went to Dragon-I on a weekday to get a taste of the season, but they were sold out, so we made a reservation and visited again a few days later.
陽澄湖大闸蟹 Hairy Crab , which are in season from October to November, are sold at the highest price in the world, and those from Yangcheng Lake in Suzhou, China, are differentiated by the tag on them. The crabs sold at Dragon-I were also from Yangcheng Lake.
This was my son's first experience with 陽澄湖大闸蟹 Hairy Crab.
The crab was freshly steamed and then brought to us to be dismantled with scissors. The staff did most of the work to remove the meat from the small legs, making it easier for us to eat. For my son who wanted to peel it himself, they carefully showed him how to do it.
The crabmeat tasted very rich and creamy. It was so rich and creamy that my son said it tasted like condensed sea urchin.
We would like to have this dish every year.

上海蟹の季節到来!
旬の味をいただきたいと、ドラゴンアイに平日行きましたが売り切れで、予約をしてから数日後に改めて伺いました。
10月から11月が旬の上海蟹(モズクガニ)は、中国の蘇州にある陽澄湖産のものが世界で最も高値で取引されているらしく、タグがついて差別化されています。ドラゴンアイで扱っているのもこの陽澄湖産でした。
息子は上海蟹初体験。
蒸し立てが運ばれ、ハサミで解体するのですが、小さな脚の肉を出す作業などを、スタッフの方がほとんどやってくれて、食べやすくしてくれました。自分で剥きたい息子には丁寧にやり方を教えてくれました。
蟹味噌の味は、とても濃厚でクリーミー。臭みやえぐみがなく、息子曰く、「まるでウニを凝縮したようだ」と。2口分くらいの量の蟹味噌でも、十分満足できるほどの濃厚さ。
毎年いただきたい味でした。
