Kazuo Takizawa, who has honed his skills at Nadaman なだ万, the pinnacle of Japanese cuisine, for 30 years and is currently the head chef at Zipangu, and Michelin chef Matteo Alberti who heads the renowned Italian restaurant Origo in Kanazawa, Ishikawa Prefecture, have joined forces for an eight-course feast that is truly a cross between the wisdom of Japan and Italy.
Combining traditional Kanazawa culture with Italian culinary techniques and the sensibilities of both chefs, this eight-course meal broke new ground in "contemporary gastronomy," and was composed with an abundance of summer in mind.
Starting with Chef Takizawa's six appetizers in a modern style that showed his respect for Matteo's cuisine, we were treated to large oysters with a rich aroma of aosa seaweed-infused batter, and the first highlight, crispy and flavorful eels served with a refreshing cucumber-infused anchovy and herb sauce. After the Daifuku Mochi with pineapple, we finished with matcha tea by Matteo's wife.
It was a wonderful dinner that was a cross between surprise, nostalgia, and novelty.
