Combining traditional Kanazawa culture with Italian culinary techniques and the sensibilities of both chefs, this eight-course meal broke new ground in "contemporary gastronomy," and was composed with an abundance of summer in mind. Starting with Chef Takizawa's six appetizers in a modern style that showed his respect for Matteo's cuisine, we were treated to large oysters with a rich aroma of aosa seaweed-infused batter, and the first highlight, crispy and flavorful eels served with a refreshing cucumber-infused anchovy and herb sauce. After the Daifuku Mochi with pineapple, we finished with matcha tea by Matteo's wife. It was a wonderful dinner that was a cross between surprise, nostalgia, and novelty.
